Lavender fields in Banstead

Last summer I took a trip to one of my favourite locations, the Mayfield Lavender Fields in Banstead with friends. We walked around the fields, the kids ran in and out of the rows of Lavender, we took a picnic and chilled for the afternoon whist catching up on news and life events, both being working mums.

We then stopped by the shop before we left and had ice-creams and warm Lavender tea, the shop sells lots of items and it got me thinking, I wanted to recreate some biscuits.

We just missed the rain and when I got home I dived into the garden and pulled some Lavender heads from my large ceramic planters and started chopping. I had a plan and all I needed was a recipe to follow. I quickly found what I was looking for on the Laura Ashley blog, a recipe for Lavender and Lemon biscuits. I pulled everything out from my baking shelf (yes I have a baking shelf in one cupboard) and started to bake these delicious biscuits.

Lavender and Lemon Biscuits

150g Plain Flour
100g Butter
50g Golden Caster Sugar
1 tbsp. Fresh or Dried Lavender Heads
3 tbsp. icing sugar
1-3 tsp Freshly Squeezed Lemon Juice

  1. Mix the flour and sugar together and then add the butter, rub the sugar and flour mixture with the butter together until it forms a dough.
  2. Add the lavender heads and knead the dough together into a ball. Wrap in cling film and leave in the fridge for 30 minutes.
  3. Pre-heat the oven to 200 degrees and knead the dough out.
  4. Roll on a floured surface and cut into desired shape, I went for heart shaped biscuits.
  5. Bake for 10-12 minutes until they start to turn brown and remove from the oven to cool.
  6. Mix the lemon juice with the icing sugar and add pink food colouring to add that romantic feel to the biscuits, draw thin lines of icing across the biscuit shape.

Very simple to bake, taste divine and make a great gift.

    Lavender biscuits sound magical! What a lovely idea – and I would personally suggest spicing them with some star anise… it would really enhance the ethereal character of lavender.
